Super Simple Weekday Breakfast Sandwich | Simple Weekday Solutions

I know life is busy but you need to take care of yourself. Coffee for breakfast is not enough. Here’s a super simple weekday breakfast sandwich that is easy to prepare for any busy mom on the go.

I’m guilty of not eating breakfast for years. I would use the excuse that I didn’t have time to eat. Then I started taking the pre-packaged oatmeal to work so I’d have something as I sat at my desk.

Oatmeal helped kickstart my metabolism in the morning, but the sugar content in even the reduced sugar oatmeal packets didn’t help my health journey. I started making my own oatmeal and preparing the breakfasts in pre-measured containers. That helped but having oatmeal every morning was boring.

Then I saw this commercial and the light bulb went on. I could make my super simple breakfast sandwich during the weekdays, with very little prep required on the weekend. Bonus! (I’ve even made this breakfast sandwich while preparing the super simple smoothie that I take for lunch)

The Egg Farmers of Canada hooked me with their commercial! We now regularly eat our “weekday” eggs and get our healthy protein in during the week. Thank you for your genius marketing Egg Farmers of Canada!

Super Simple Weekday Breakfast Sandwich

This super simple weekday breakfast sandwich is really an egg sandwich on an English muffin. It’s very popular with a fast food restaurant that most parents have ventured to over the years.

Ingredients

English Muffin
Egg (Make sure it is the Weekday Egg shown in the video above – hahaha)
1 Tbsp water
Turkey Bacon (pre-cooked on the weekend and frozen)
Sliced Cheese (I preferred real cheese pre-sliced, rather than the processed cheese slice)

Directions

Weekend prep involves cooking up a package of our favorite turkey bacon and then freezing it so it keeps and is easy to use in other meals throughout the week. We also freeze the English Muffins so they don’t go bad before we use the package.

Thaw out the English muffin either the night before or for 20 seconds in the microwave. Then split it and lightly toast it to your preferred liking.

While your English muffin is in the toaster, thaw the turkey bacon for 15 seconds.

Break the egg into a 1 cup microwaveable Ziploc container. This is the perfect size container so your egg will fit onto the English muffin.

Add 1 tablespoon of water and beat the egg with a fork.

Microwave for 1 minute.

Assemble your super simple weekday breakfast sandwich by placing the fluffy scrambled egg on the toasted English muffin along with the turkey bacon and sliced cheese.
